Fresh Strawberry Butter Icing.
Beautiful topping to add to my favorite Hot Milk Sponge Cake. (Click here for recipe.)
375ml softened butter (room temperature is good)
3 cups (750ml ) icing sugar
2 tablespoons hot water
1 teaspoon of vanilla essence
few drops of pink or red food colouring
6 – 8 finely chopped fresh strawberries.
1. Using an electric mixer, beat together the butter, icing sugar and water at high speeds for approximately 5 minutes or until creamy.
2. Add the vanilla essence and food colouring and mix.
3. Finely mix in the finely chopped, or minced strawberries.
4. Ice your cake and top with whole strawberries that have been dipped in dark chocolate.
(NOTE: do not try and pipe this as the bits of strawberry will get jammed in the nozzel.)
